Greek Shrimp Scampi, opa!!

Greek Shrimp Scampi with Linguini

 If you love feta and kalamata olives, this recipe is for you! It originally came from Rachel Ray, but now has my modifications. Sooo good!!

1 pound linguini

1 pound medium shrimp, peeled, cleaned and deveined, tails removed

1/3 Extra virgin olive oil

4 cloves garlic, minced

Couple pinches of red pepper flakes

1 Tbls greek seasoning

1 lemon, zested and juiced

Cup pitted kalamata olives, chopped

1/3 Cup chx stock

1 Cup feta cheese crumbles

 Cook pasta as directions indicate. In a medium saucepan, heat extra virgin olive oil and add garlic. When garlic is browned slightly, add shrimp and cook for 3-4 minutes, until lightly pink. Add red pepper flakes, Greek seasoning, lemon zest, olives and chicken stock. Remove from heat and add a ladle of starchy pasta water to the pan and the  reserved lemon juice.

Drain pasta and add to the skillet, allowing juices to soak in for a minute. Use tongs to pull the pasta from the skillet, giving it a turn to incorporate as many ingredients as possible. Serve on plates and add lots of feta cheese to each portion.
